Marcus thrives on exquisite food and wine. His enthusiasm stems from his parent’s passion for cooking fresh, natural and balanced foods. He has been waiting tables at 85 Miskin Street since 2003 at the then Bruno’s Tables. He warmly welcomed Brent to this unique location in 2005 and helped maintain the high standard of service. In 2006, Marcus travelled to Lyon, France, where he worked at La Boname de Bruno in the kitchen by day and the floor by night. Marcus is widely experienced and since returning from France, he has also worked at Royal on the Park Hotel, Spoon Cafe Paddington, Piaf Bistro, Sardine Tin Wine Bar and at the Byblos Cocktail Lounge. In 2011, Marcus has returned full time to Brents Restaurant as Restaurant supervisor.
